What We Taste
A wine of harmony, poise and earthy elegance. Strawberries, raspberries and baked red plums on the nose, accented with hints of red licorice, spring flowers, sweet oak, and a delicate strain of bacon grizzle. Satiny mouth feel, polished tannins, detailed red fruit and spicy balsamic notes deliver a long, silky beautiful landing.
What We Made
50% Grenache, 25% Syrah, 22% Mourvedre, 3% Cinsault. All from small, local vineyards (Palmador, Miramonte and EV). Fermented separately in 1 ton open top fermenters, punched down by hand 3x a day. Cooperage included 16 months of Marcel Cadet, Saury, Quintessence, Vallaurine, Radoux. 784 cases produced. 14.2% ABV.
How We Serve
Serve at about 60 degrees. That's about 15-20 minutes in your refrigerator. Pairs incredibly well with poultry, leaner red meats. Absolutely gorgeous with grilled red salmon.
