2010 Opulente

What We Taste
A wine of harmony and sensual grace. Bright, delicate strawberry, raspberry notes on the nose, accented with hints of spring flowers, gentle toasty oak, and a delicate strain of vanilla and earthy spice. Satiny mouth feel, polished tannins, and detailed red fruit deliver a long, beautiful finish. A little light on color, but deceptively long on flavor!

What We Made
65% Grenache, 30% Syrah, 5% Mourvedre. All from small, local vineyards (Palmador, Miramonte and EV). Cold soaked for 5 days, fermented separately in 1 ton open top fermenters, punched down by hand 3x a day, finished with 4-5 days of maceration. Cooperage included 16 months of Marcel Cadet, Saury, Quintessence, Vallaurine, Radoux. 14.5% ABV.

How We Serve
Serve at about 60 degrees. That's about 15-20 minutes in your refrigerator. Pairs incredibly well with poultry, leaner red meats. Absolutely gorgeous with grilled red salmon.
